Go to the Palawaan Island level, jump in the water, swim down, then swim very fast up to the shore so that Indy gets out of the water without putting his hat on. Indy will not be able to use his guns, whip, or any other weapon other than the machete. Jump back in the water and come out properly, and his hat will be put back on.
